Microwaved Simple Harvard Beets

|Sugar||1⁄4 Cup (4 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Beet liquid||1 Cup (16 tbs) (Plus Water)|
|Canned diced beets||1 Pound, drain and reserve liquid (1 Can)|
In 1-quart casserole, combine sugar, cornstarch, salt, and pepper.
Stir in vinegar, liquid and beets.
Cook covered, 6 minutes or until mixture boils and thickens slightly, stirring occasionally during last half of cooking time.
