Microwaved Simple Harvard Beets

Ingredients
  Sugar 1⁄4 Cup (4 tbs)
  Cornstarch 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Vinegar 1⁄4 Cup (4 tbs)
  Beet liquid 1 Cup (16 tbs) (Plus Water)
  Canned diced beets 1 Pound, drain and reserve liquid (1 Can)
Directions

In 1-quart casserole, combine sugar, cornstarch, salt, and pepper.
Stir in vinegar, liquid and beets.
Cook covered, 6 minutes or until mixture boils and thickens slightly, stirring occasionally during last half of cooking time.
