Orange And Beets
|Water||1⁄2 Cup (8 tbs)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Grated orange rind||2 Teaspoon|
|Cider vinegar/Rice vinegar / wine vinegar||1 Tablespoon|
|Brown sugar||1 Tablespoon|
|Freshly ground black pepper||To Taste|
Cook the beets in boiling water for 20 minutes.
Remove from the heat but leave them in the boiled water to keep hot.
Mix the remaining ingredients together in a saucepan.
Bring to the boil and simmer, stirring, for about 25 minutes until the cornstarch has cooked and the sauce is clear.
Peel and cube the hot beets and place in a warm serving dish.
Pour the sauce over the hot beets and serve immediately.
