|Beet greens||2 Quart, well washed and shaken dry|
|Vegetable oil||2 Tablespoon|
|Onion||1 Small, finely chopped|
1. Put the greens, with only the water clinging to the leaves, in a large kettle, add salt to taste, cover tightly, and cook until wilted.
2. Meanwhile, heat the oil and saute the onion until golden. Sprinkle with the flour and stir to mix.
3. Add the onion-flour mixture to the cooked greens and heat, stirring, until the mixture thickens slightly.
