Pickled Beets

Ingredients
  Cider vinegar 1⁄2 Cup (8 tbs)
  Beet juice 1⁄2 Cup (8 tbs)
  Honey 1 Tablespoon
  Cloves 2
  Salt 1⁄2 Teaspoon
  Peppercorns 3
  Bay leaf 1⁄4
  Green onions 2 Small, sliced
  Cooked beets 2 1⁄2 Cup (40 tbs), sliced
Directions

Boil together vinegar and beet juice for a few minutes.
Add honey, cloves, salt, peppercorns and bay leaf.
Heat to boiling.
Pour over onions and beets and allow to cool.
