|Lemon gelatin||6 Ounce (Two 3 Ounce Packages)|
|Boiling water||2 Cup (32 tbs)|
|Sugar||1 Cup (16 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|Wine vinegar||1 Cup (16 tbs)|
|Chopped cooked beets||2 Cup (32 tbs)|
|Pickled grated horseradish||1 Tablespoon|
|Grated onion||1 Teaspoon|
Dissolve gelatin in boiling water and add sugar; stir until dissolved.
Add cold water, vinegar and salt to taste.
Chill until mixture is a soft jelly.
Add beets, horseradish, and onion.
Pour into a mold which has been rinsed with cold water.
