Beef Short Loin

Beef short lion, a beef cut from the steer or heifer that includes the spine, top lion and tenderloin, is used in making beef steaks. Popular strip steaks like Delmonico, porterhouse; Kansas City Strip, New York Strip and T-Bone are cut from the beef short lion. Beef short lion steaks are used in a range of main course beef recipes. The tender lion cut is cooked quickly over dry heat. Generally eaten as a whole, and perfectly accompanied sautéed vegetables like potatoes and French beans, salads, and sauces.
