A number of recipes are made with beef liver. Most commonly it is fried. The liver is sliced thinly, coated with flour and seasoned with salt and pepper. It is then fried in bacon drippings or butter till done. Cooking in bacon drippings is preferable to cooking in butter as it makes the liver very flavorful.
