Beef With Onions
|Lean beef||2 Pound, cut in 1 1/2 in. pieces|
|Olive oil||2 Tablespoon|
|Small white onions||4 Pound|
|Ripe firm tomatoes||4 , quartered|
|Garlic||2 Clove (10 gm), minced|
|Wine vinegar||2 Tablespoon|
Brown meat on all sides in hot butter and oil in a large heavy saucepot.
Add remaining ingredients and then enough water to half cover ingredients in the pot.
Season to taste with salt and pepper.
Bring to boiling, cover and simmer 1 1/2 hours, or until meat is tender and liquid is reduced to a flavorful gravy.
