Beef With Snow Pea Pods And Water Chestnuts
|Beef||1 Pound, sliced very thin (Use Top Round)|
|Soy sauce||2 Tablespoon|
|Dry sherry||2 Tablespoon|
|Vegetable oil||2 Tablespoon|
|Snow pea pods||16 , strings removed|
|Water chestnuts||8 , sliced|
|Chicken broth/Stock||1⁄2 Cup (8 tbs)|
|Cold water||2 Tablespoon|
Freeze meat partially; slice thin.
Combine 1 tablespoon soy sauce and 1 tablespoon dry sherry in small bowl.
Add beef; let stand 20 to 30 minutes.
Heat oil in wok or skillet.
Stir-fry pea pods 1 to 2 minutes or just until green color brightens; push aside.
Stir-fry water chestnuts 1 minute; push aside.
Stir-fry beef 3 to 4 minutes.
Return pea pods and water chesnuts to beef in wok.
Add broth, 1 tablespoon soy sauce, 1 tablespoon dry sherry, and cornstarch mixture.
Heat until sauce boils and is thickened and clear.
Garnish with walnuts.
