Island Beef Skewers
|Flank steak||1 Pound, sliced diagonally, then into 1 inch pieces|
|Apricot pineapple jam||1 Cup (16 tbs)|
|Pineapple chunks||1 Can (10 oz) (Drained)|
|Green pepper||1 Large, cut into 1 inch chunks|
|Wooden skewers||24 (6 Inch)|
|Sesame seeds||2 Tablespoon (Divided)|
In glass baking dish, combine teriyaki marinade, apricot pineapple jam and flank steak pieces.
Let sit for at least 45 minutes.
Ten minutes before skewering, add pineapple and green pepper to marinade.
On each skewer, slide on beef, pineapple, and green pepper.
Repeat and end with beef.
Drain off excess marinade.
In same dish place 12 filled skewers at a time.
Sprinkle with half of sesame seeds.
Cook on roast (7) for 12 minutes, stopping midway to drain any accumulated liquid.
Repeat with remaining skewers.
