Kidney A La Francais

Ingredients
  Beef kidney 1
  Flour 1 Cup (16 tbs)
  Fat 1 Tablespoon
  Bay leaf 1
  Lemon slice 1⁄4 Inch
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1.Start by washing and removing the skin from the kidneys
MAKING
2.In a pot, place the kidneys and simmer in water to cover for 10 minutes
3.Now cut out the cords and most of the center fat
4.Let stand to cool, then slice thin
5.Now dip each piece in flour and place in a pan and saute in fat until brown
6.Remove the meat from the pan, add flour to fat, stirring well, until thoroughly brown
7.Add boiling water, stirring until smooth
8.Return meat to the pan and add bay leaf, salt, pepper and slice of lemon from which the peel has been removed
9.Simmer for 60 minutes with the pan covered, adding more water if needed
10.Remove bay leaf
SERVING
11.Serve with a sauce of your choice
