Beef With Scallion

Ingredients
  Trimmed skirt steak/Well trimmed flank steak 1⁄2 Pound, well trimmed
  Reduced sodium soy sauce 2 Teaspoon
  Dry sherry 1 Tablespoon
  Minced fresh ginger 3 Tablespoon
  Scallions 2 Bunch (200 gm)
  Corn oil 3 Tablespoon
  Garlic cloves 2 Large
Directions

Slice flank steak on diagonal into slices less than 1/4 inch thick.
Mix with soy sauce and sherry.
Mince ginger.
Cut scallions into 1 inch pieces.
Heat 2 tablespoons oil in wok or heavy skillet.
Add beef mixture and ginger, put garlic through press directly into pan and stir fry about 3 minutes, until beef loses pink color.
Remove and keep warm in serving dish.
Add remaining tablespoon oil and heat.
Stir fry scallions for about 1 to 1 1/2 minutes, until shiny.
Mix with beef and serve.
