Beef With Scallion
|Trimmed skirt steak/Well trimmed flank steak||1⁄2 Pound, well trimmed|
|Reduced sodium soy sauce||2 Teaspoon|
|Dry sherry||1 Tablespoon|
|Minced fresh ginger||3 Tablespoon|
|Scallions||2 Bunch (200 gm)|
|Corn oil||3 Tablespoon|
|Garlic cloves||2 Large|
Slice flank steak on diagonal into slices less than 1/4 inch thick.
Mix with soy sauce and sherry.
Cut scallions into 1 inch pieces.
Heat 2 tablespoons oil in wok or heavy skillet.
Add beef mixture and ginger, put garlic through press directly into pan and stir fry about 3 minutes, until beef loses pink color.
Remove and keep warm in serving dish.
Add remaining tablespoon oil and heat.
Stir fry scallions for about 1 to 1 1/2 minutes, until shiny.
Mix with beef and serve.
