Classic Corned Beef Dinner
|Corned beef brisket||4 Pound|
|Canned beer||12 Ounce|
|Whole cloves||1⁄2 Teaspoon|
|Celery stalks||2 (With Leaves)|
|Potatoes||6 , pared|
|Carrots||6 Large, pared|
|Green cabbage||1 Medium, quartered|
Place brisket in deep kettle; add enough cold water to just cover.
Add beer, onion, bay leaf, cloves, peppercorns and celery; cover.
Bring to a boil; reduce heat and simmer for 5 hours or until almost tender.
Remove and discard onion and celery; skim excess fat from liquid.
Add potatoes and carrots; simmer for 15, minutes.
Add cabbage; simmer an additional 30 minutes or until all vegetables are tender.
