Beef And Mushrooms Florentine
|Olive oil||2 Tablespoon|
|Chopped onion||2 Cup (32 tbs)|
|Garlic||1 Clove (5 gm), finley minced|
|Ground round steak||1 Pound|
|Sliced mushrooms||1⁄2 Pound|
|Spinach||1 Pound, rinsed, drained well and coarsely chopped|
|Eggs||2 , well beaten|
|Ground pepper||To Taste|
In a large skillet, heat the butter and oil.
Add the onion and garlic and cook until the onion is wilted.
Add the beef, breaking up the lumps with the side of a metal spoon.
Add the mushrooms and cook until much of the moisture evaporates.
Stir in the spinach and when it wilts, add the eggs, nutmeg, salt and pepper.
Cook, stirring, until they are blended throughout and set.
Do not overcook.
