Five Flavor Beef
|Beef brisket||4 Pound|
|Soy sauce||2 Cup (32 tbs)|
|Water||2 Cup (32 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Sherry||1 Cup (16 tbs)|
Heat a deep, heavy pan with oil and when it is very hot place the whole piece of meat in it and brown on all sides.
Mix the soy sauce, water, cinnamon, anise, sugar and salt in a large bowl and pour slowly over the meat.
Cover the pan and when the liquid comes to a boil, turn down the heat and simmer.
Baste from time to time and turn the meat every half hour.
After the meat has cooked for 1 1/2 hours, turn up the heat and add the sherry and when it comes to the boil again, turn down the heat and simmer for another 1/2 hour.
During the last 15 minutes, turn the heat high and cook till the gravy is thickened and absorbed into the meat.
The presence of sugar will thicken the liquid, therefore, you must be very careful to watch this last cooking period very carefully.
Cut the meat into thick slices and pour gravy over it.
Serve very hot.
