Christmas Beef Tenderloin
|Beef tenderloin||2 1⁄2 Pound, cut open like a fillet (1 Unit)|
|Garlic powder||1 Teaspoon|
|Frozen sea scallops||1 Pound, thawed|
Open the beef tenderloin so it lies flat.
Season the open surface with parsley, garlic powder and pepper as desired.
Layer the sea scallops over the surface.
Close the tenderloin and place in a roasting pan sprayed with nonstick cooking spray.
Season the outside of the meat with parsley, garlic powder and pepper as desired.
Bake at 425 degrees for 45 to 50 minutes.
Let stand for 10 minutes.
Cut and serve
