Roast slow cooked to tender perfection with vegetable gravy.
5 Medium, halved
1⁄2 Medium, sliced
2 Clove (10 gm), minced
3 , sliced
2 , diced
Chicken stock/Beef stock
2 Cup (32 tbs)
Prepare vegetables and place in slow cooker, pour stock over them. Turn slow cooker to whatever setting best fits your schedule. I did mine on High for 6 hours. You can do up to 10 hours on low. Rub all spices into both sides of the roast and sear it for 1 minute on both sides in a smoking hot heavy skillet.
Place roast over all vegetables except carrots. Allow to cook.
When meat is done, remove it to a platter along with carrots and potatoes. Take all broth and vegetables from the bottom of the crock and place in blender with flour and salt to taste. Blend til smooth.
From blender pour the gravy into a sauce pan and cook down by half to thicken further. Serve over meat, carrots and potatoes. Enjoy!
