Beef Stock

Ingredients
  Beef soup bones 8 Pound
  Salt To Taste
  Onions 2 Large, peeled and left whole
  Peppercorns 10
  Whole allspice 2
  Carrots 2 , scraped
  Parsley sprigs 4
  Bay leaves 2
  Celery stalks 2
  Water 1 Cup (16 tbs) (To Cover Bones)
Directions

Combine all ingredients in a 12 quart saucepot.
Bring to boiling, lower heat, and simmer 10 to 12 hours, skimming off foam from top.
Strain.
Discard solids.
Cool.
Skim off fat.
Taste for salt.
