Beef Tongue Casserole

Ingredients
  Beef tongue 3 Pound
  Stock 2 Cup (32 tbs) (To Cover)
  Carrots 1 Cup (16 tbs), diced
  Turnips 1⁄2 Cup (8 tbs), diced
  Celery and tops 1 Cup (16 tbs), diced
  Potatoes 1 Cup (16 tbs), diced
  Peas 1 Cup (16 tbs)
  Beans 1 Cup (16 tbs), cooked
  Onions 6 Small
  Tomatoes 3 , sliced
  Soy grits 1⁄4 Cup (4 tbs), soaked in 0.5 cup stock
  Salt 1 Teaspoon
  Nutritional yeast 3 Tablespoon
  Parsley 3 Tablespoon, minced
  Rosemary 1 Teaspoon
  Nutmeg 1⁄4 Teaspoon, ground
Directions

Cover tongue with stock.
Simmer for 2 hours.
Remove skin and place tongue in large casserole.
Surround and cover with vegetables and soy grits.
Blend remaining ingredients with stock.
Pour mixture over tongue and vegetables.
Cover and bake at 300° F., about 2 hours.
