Spicy Orange Beef Lettuce Packets

Ingredients
  Beef boneless steak/Boneless top sirloin steak cut 0.75 inch thick / flank steak 1 Pound
  Cornstarch 2 Teaspoon
  Vegetable oil 1 Tablespoon
  Crushed red pepper 1⁄4 Teaspoon
  Shredded carrot 1 Cup (16 tbs)
  Thinly sliced green onions 1⁄2 Cup (8 tbs)
  Boston lettuce head 2
  Frozen orange juice concentrate 2 Tablespoon, Defrosted
  Hoisin sauce 2 Tablespoon
  Rice wine vinegar 2 Tablespoon
  Soy sauce 2 Tablespoon
Directions

Trim fat from beef steak.
Cut steak lengthwise in half and then crosswise into 1/8 inch thick strips.
In medium bowl, combine beef and 2 tsps.cornstarch; toss to coat.
Set aside.
In small bowl, combine sauce ingredients; set aside.
In large nonstick skillet, heat oil and red pepper over medium high heat until hot.
Add beef (1/2 at a time) and stir fry 1- 2 minutes or until outside surface is no longer pink.(Do not overcook.)
Add sauce, carrot and green onions; cook and stir until sauce is thickened and bubbly.
To assemble, spoon small amount of beef mixture in center of each lettuce leaf and fold over to close.
