Roast Beef Au Vin
|Sirloin tip roast||3 Pound|
|Suet||4 Ounce (1 Strip)|
|Blackberry wine||3⁄4 Cup (12 tbs)|
Season roast with salt and pepper.
Place roast on aluminum foil; place suet on top of roast.
Fold aluminum foil over meat; seal top and one end of aluminum foil.
Pour wine in open end; seal.
Roast at 325 degrees to desired degree of doneness.
To make gravy, mix 1/2 cup water and 4 tablespoons flour for each 1 1/2 to 2 cups liquid from meat.
Pour slowly into meat stock, stirring constantly.
Cook over very low heat, stirring constantly, until thickened.
