Eggplant And Ground Beef Casserole
|Onion||1 Large, diced|
|Margarine||1⁄2 Cup (8 tbs)|
|Ground beef||1 Pound|
|Tomato sauce||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
Saute onion in 2 tablespoons oil or margarine until tender.
Add ground beef; cook until brown.
Combine tomato sauce, water, salt, and pepper; pour over meat mixture.
Bring to boil; simmer for 5 rninutes.
Using perforated spoon, remove meat from pan; set aside.
Slice eggplant into 1/4 inch slices.
Brown lightly in remaining oil or margarine.
Place a layer of eggplant in bottom of 1 1/2 quart cas serole.
Spread a layer of ground beef on top.
Place another layer of eggplant next; end with a layer of ground beef.
Pour the sauce over all.
Bake in 325Â°F toaster oven 20 to 25 minutes or until eggplant is done.
