  Lamb kidneys 12 Ounce
  Lean boneless beef chuck 1 Pound
  Savory pastry 1
  Potatoes 4 Medium, pared and sliced thin (3 Cups)
  Onion 1 Large, peeled and sliced
  Flour 3 Tablespoon
  Salt 1 Teaspoon
  Thyme 1⁄2 Teaspoon, crumbled
  Ground allspice 1 Dash
  Water 3⁄4 Cup (12 tbs)
  Worcestershire sauce 1 Teaspoon

1 Soak kidneys overnight in lightly salted water to cover; drain.
Halve lengthwise; cut out tubes and white membrane(Scissors do a neat quick job.). Dice meat.
2 Trim any excess fat from beef; moisten meat and sprinkle with tenderizer, following label directions; cut meat into 1/2-inch cubes.
3 Try out enough fat trimmings to make 2 tablespoons drippings in a medium-size frying pan; discard trimmings.
4 Brown beef cubes in drippings in frying pan; remove with a slotted spoon and set aside.
Saute kidneys in drippings in same pan, stirring often, just until meat loses its pink color; remove and combine with beef.
5 Prepare Savory Pastry.
Roll out two thirds to a 12-inch round on a lightly floured pastry cloth or board; fit into a deep 9-inch pie plate; trim overhang to 1/2 inch.
6 Combine potatoes and onion in a medium-size bowl; sprinkle with flour, salt, thyme, and allspice; toss to coat well.
Layer half of the vegetable mixture, all of the meat, and remaining vegetable mixture into prepared pastry shell.
Mix water and Worcestershire sauce in a cup; drizzle over filling.
7 Roll out remaining pastry to an 11-inch round; cut several slits near center to let steam escape; cover pie.
Trim overhang to 1 inch; turn edges under, flush with rim; flute.
8 Bake in hot oven {400°) 1 hour and 10 minutes, or until meat and vegetables are tender and pastry is richly golden.
Let stand 15 minutes, then cut into wedges.
Savory Pastry:
Measure 2 cups sifted all-purpose flour into a medium-size bowl; cut in 1/2 cup chilled bacon drippings with a pastry blender until mixture is crumbly.
Sprinkle with 5 tablespoons water, 1 tablespoon at a time; mix lightly with a fork just until pastry holds together and leaves side of bowl clean.
(If you do not have bacon drippings, use 2/3 cup vegetable shortening plus 1/2 teaspoon salt.)
