New England Boiled Dinner
|Corned silverside||4 Pound|
|Onion||1 , quartered|
|Turnip||1 Small, sliced|
|Carrots||3 Large, quartered|
Rinse silverside in cold water.
Place in large saucepan and cover with warm water.
Add quartered onion, turnip, bay leaf and peppercorns.
Bring to a slow boil, cover tightly and simmer for 2 hours.
Lift out beef, strain liquid to remove flavorings.
Return liquid to saucepan with beef and add carrots and onions.
Simmer for 30 minutes.
Add potatoes and cabbage wedges.
Cook until meat and vegetables are tender.
Serve some of the broth with the Boiled Dinner.
