Roast Stuffed Topside
|Corner cut topside beef||3 Pound|
|Herb and bacon stuffing||2 Cup (32 tbs)|
Cut a deep pocket into the beef.
Wipe the beef with paper towels and fill the pocket with Herb and Bacon Stuffing.
Close opening with small skewers or by sewing with string.
Place beef on a rack in a roasting pan, fat side up, and cook in a moderately slow oven for 1 1/2 hours.
This time, 30 minutes to the pound, gives you roast beef which is pink and juicy inside so cook for another 30 minutes for well done roast beef.
