Boiled Corned Beef
|Corned silverside/Rolled brisket||4 Pound|
|Brown sugar||1 Tablespoon|
Weigh corned beef and calculate cooking time.
Rinse in cold water, place in a deep saucepan and cover with cold water.
Add brown sugar, peppercorns, bay leaf and vinegar.
Bring to simmering point and simmer, covered, for required time.
Cool in liquid.
Remove and wrap closely.
Store in refrigerator till needed.
