Sweet-And-Sour Beef

This Sweet and Sour Beef is a welcome change from the usual savory beef dishes. This Sweet and Sour Beef poured over rice or noodles makes a fabulous lunch! Try out the dish and let me know your suggestions if you have any!
  Shortening 1 Tablespoon
  Cubed lean stewing beef 2 Pound
  Salt 1⁄2 Teaspoon
  Canned tomatoes 2 Cup (32 tbs)
  Brown sugar 1⁄3 Cup (5.33 tbs)
  Vinegar 1⁄3 Cup (5.33 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Bay leaf 1⁄2
  Green pepper To Taste

Melt shortening in large skillet, brown beef on all sides.
Add salt, tomatoes, brown sugar, vinegar, onion, and bay leaf.
Cover skillet, lower heat.
Allow to simmer about 2 hours or until beef is tender.
Last, add pepper strips to beef, cook for 10 minutes more to blend all flavors.
Serve over hot rice or with noodles.
