  Beef eye of round roast 5 1⁄2 Pound
  Garlic 3 Clove (15 gm)
  Burgundy/Dry red wine 1 1⁄2 Cup (24 tbs)
  Lemon juice 2 Tablespoon
  Worcestershire sauce 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 2 Teaspoon
  Plum tomato wedges 4
  Tarragon 2
  Horseradish sauce 1 Tablespoon

Trim excess for from roast.
Make small slits in roast; stuff each slit with a slice of garlic.
Place roast in a 10- x 9- x 2-inch baking dish.
Combine wine, lemon juice, Worcestershire sauce, salt, and pepper; pour over roast.
Cover and refrigerate overnight, turning roast occasionally.
Remove roast from marinade; discard marinade.
Place roast on a rack in a shallow roasting pan; insert meat thermometer, if desired.
Cover with aluminum foil, and bake ot 450° for 20 minutes; uncover and bake until meat rhermometer registers 140°.
Transfer roast to a warm serving platter; let stand 15 minutes before cutting across groin into thin slices.
Garnish with plum tomato wedges and tarragon sprigs.
Serve with 1 table-spoon Horseradish Sauce per serving.
