Oven Pot Roast
|Flour||1⁄3 Cup (5.33 tbs)|
|Garlic||1 Clove (5 gm)|
|Rump roast of beef||4 Pound|
|Strong coffee||1⁄4 Cup (4 tbs)|
|Meat sauce||1 Teaspoon|
Combine flour, 1 tsp. salt, 1/4 tsp. pepper, paprika and garlic.
Rub into meat on all sides.
Put meat in roasting pan and put under broiler.
Brown well on all sides, turning often.
Remove meat from oven and set oven control at 375 degrees.
Lift roast out of pan onto a large sheet of heavy-duty aluminum foil.
Pour any fat out of roasting pan.
Lift meat and foil into roasting pan.
Combine coffee, 1 tsp. salt, 1/8 tsp. pepper and meat sauce and pour over meat.
Add carrots and potatoes.
Sprinkle vegetables generously with salt and pepper.
Wrap roast and vegetables tightly in foil, sealing well at ends.
Roast 2 1/2 hours, or until very well done.
Skim fat from juices in foil and serve liquid spooned over thick slices of meat.
