|Garlic||1 Clove (5 gm)|
|Pan gravy||1⁄2 Cup (8 tbs)|
Cut slits in roast and insert garlic slivers; let roast stand at room temperature for 30 minutes.
Place, rib side down, on greased rack in roasting pan; roast in 325 Ã‚Â°F (160T) oven for about 2 hours and 20 minutes for rare or until meat thermometer registers 140Ã‚Â°F (60Ã‚Â°C) or until desired doneness.
Transfer roast to warm platter, reserving pan juices for gravy.
Cover with foil and let stand for 20 minutes before carving and serving with Pan Gravy.
