Sloppy Joe Casserole

Ingredients
  Lean ground beef 1 1⁄2 Pound
  Onion 1 Large, finely chopped
  Carrots 2 Medium, grated
  Frozen corn 1 Cup (16 tbs)
  Salsa 1 Cup (16 tbs) (FOR THE SAUCE:)
  Ketchup 1⁄2 Cup (8 tbs) (FOR THE SAUCE:)
  Brown sugar 3 Tablespoon (FOR THE SAUCE:)
  Yellow mustard 2 Tablespoon (FOR THE SAUCE:)
  Steak sauce 2 Tablespoon (FOR THE SAUCE:)
  Salt 1 Teaspoon (to taste - FOR THE SAUCE:)
  Pepper 1 Teaspoon (to taste - FOR THE SAUCE:)
  Water 1 Cup (16 tbs) (FOR THE SAUCE:)
  Gluten free bisquick 1 1⁄4 Cup (20 tbs) (FOR THE CHEDDAR SCALLION BISCUIT TOP)
  Cold butter 4 Tablespoon, diced (FOR THE CHEDDAR SCALLION BISCUIT TOP)
  Milk 1⁄2 Cup (8 tbs) (FOR THE CHEDDAR SCALLION BISCUIT TOP)
  Eggs 3 (FOR THE CHEDDAR SCALLION BISCUIT TOP)
  Low fat cheddar 2 Ounce, grated (FOR THE CHEDDAR SCALLION BISCUIT TOP)
  Scallion 1 Medium, finely chopped (FOR THE CHEDDAR SCALLION BISCUIT TOP)
  Chili powder 1 Dash (FOR THE CHEDDAR SCALLION BISCUIT TOP)
  Olive oil 1 Teaspoon (for greasing the casserole)
Directions

GETTING READY
1. Preheat the oven to 400 degrees F.
2. Grease a 9x12 inch casserole dish.
3. Mix all of the sauce ingredients together and set it aside.

MAKING
4. In a large nonstick skillet sauté the beef, onions and carrots for 10 minutes.
5. Lower the heat to medium and stir in the sauce, corn and water and simmer for an additional 10 minutes.
6. Transfer the meat mixture to the casserole dish.
7. In a medium bowl beat the eggs, milk and scallions together and set aside.
8. In a larger bowl add the Bisquick and the chilled diced butter. Pinch the butter between your fingers until you’ve got a coarse crumbly mixture.
9. Stir in the grated cheddar and the wet ingredients and mix until the wet and dry ingredients are well combined.
10. Dollop the biscuit dough over the top of the casserole and sprinkle with chili powder.
11. Bake it for 20 minutes or until the biscuits.

SERVING
12. Serve Sloppy Joe Casserole hot in a palate.
