In a tablespoonful of fat, brown the sliced onion and bacon, and add the diced beef.
Over a high heat, add pepper, a clove, the bunch of mixed herbs, a piece of lemon or orange peel, garlic, add the stoned olives.
Cover, and cook on a gentle heat for 1 hour.
Then take out the peel and the bunch of mixed herbs, and put the beef and vegetables on a hot dish.
If necessary add a little stock to the sauce; bind with the fat mixed in flour, and pour over the beef.
