|Mixed vegetables||1 Pound (Carrots, Onions, Celery, Leeks, Turnips)|
|Beef rib||3 Pound, rolled|
|Thyme leaves||1 Teaspoon|
|Water/Stock||1 Cup (16 tbs)|
1) Wash the vegetables and peel them.
2) Cut the vegetables into cubes.
3) Brown the meat in fat and top with vegetables.
4) Add herbs along with seasoning. Pour water or broth.
5) Cover the meat and cook for 1 1/2 hours at 325 degrees F, 170 degrees C, gas Mark 3
6) Serve the dish when it is cold.
