Country Skillet Beef

Ingredients
  Chuck beef roast/Beef blade 7 Pound
  Onion 1 , thinly sliced
  Water 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Peppercorns 6
  Bay leaf 1
  Potatoes 4 , pared and halved
  Zucchini 4 , sliced
  Sweet red pepper 1 , sliced into rings
  All purpose flour 3 Tablespoon
Directions

MAKING
1) Into a kettle, oven or frying pan, fry the beef till browned and set aside
2) Drain off the excess fat, reserving 2 tablespoons
3) Saute the slice onions till tender
4) Add water, salt and the peppercorns
5) Return the meat to the pan, kettle or oven
6) Layer the potatoes around the meat
7) Simmer for 30 minutes and then arrange the zucchini on top of the meat
8) Add in the red pepper rings and simmer for an additional 10minutes till the vegetables are cooked
9) Strain and pour the broth into a measuring jar yielding about 4 cup
10) Allow to stand for a minute and then skim off the fat
11) Add water to the broth and add in the flour
12) Cook over the fire till thickened

SERVING
13) Slice the meat and serve the meat with the gravy
