Beef Fillets Country Style

Ingredients
  Potatoes 1 Pound (500 Gram)
  Thick rump steak 1 Pound (500 Gram)
  Mushrooms 1⁄2 Pound (250 Gram)
  Oil 2 Teaspoon
  Brown stock 1⁄2 Pint (250 Milliliter)
  Horseradish sauce 1 Tablespoon (1 X 20 Milliliter Spoon)
  Red currant jelly 1 Tablespoon (1 X 20 Milliliter Spoon)
  Peppercorns 4
  Parsley 1 Tablespoon
Directions

MAKING
1) Scoop the potatoes into balls and add into boiling salted water till tender.
2) Simmer together the stock, horseradish, redcurrant jelly and peppercorns for 15 minutes.
3) Cut the steak into pieces and season with salt and pepper.
4) Fry in oil till tender.
5) Separately saute the mushrooms.
6) Arrange the potato balls in the centre of the dish and add the mushrooms and steak around it.
7) Strain and pour the gravy over the meat.

SERVING
8) Garnish the potatoes with chopped parsley and serve.
