Beef Cabbage And Rice
|Special oil||2 Tablespoon|
|Cooked rice||3 Cup (48 tbs), chilled|
|Lean top round||3⁄4 Pound|
|Soy sauce||1 Tablespoon|
|Thinly sliced onions||1⁄2 Cup (8 tbs)|
|Julienne cut green pepper||1⁄2 Cup (8 tbs)|
|Shredded chinese cabbage/Sliced celery||1 1⁄2 Cup (24 tbs)|
|Freshly ground black pepper||1⁄2 Teaspoon|
Heat 1 tablespoon oil in a skillet: saute the rice 5 minutes, stirring frequently.
Keep warm while preparing the beef.
Cut the beef in very narrow strips and toss with the soy sauce.
Heat the remaining oil in a skillet; add the undrained beef; cook over high heat 1 minute, stirring steadily.
Add the onions, green pepper, cabbage and pepper.
Cook over medium heat 5 minutes.
Heap the rice on a platter and cover with the beef mixture.
