Roast Beef Hash
|Olive oil||2 Tablespoon|
|Frozen chopped onion||1 1⁄2 Cup (24 tbs)|
|Diced beef roast||2 Cup (32 tbs)|
|Baked potatoes||4 , peeled and diced to make 4 cups|
|Freshly ground black pepper||To Taste|
1. In a nonstick or cast-iron skillet over medium heat, heat the oil. Add onion and cook, stirring often, until golden, about 4 minutes. Add beef and cook until no longer pink. Transfer to a plate.
2. Add butter to the skillet. Add potatoes and cook over medium-high heat, turning infrequently, until browned and crusty, about 6 minutes. Return beef mixture to pan and cook until heated through, about 2 minutes. Season with salt and pepper.
