Kidney Saute

Ingredients
  Baby beef kidneys 2 Pound
  Parsley 1 Tablespoon
  Onion 1
  Garlic 1
  Butter 2 Tablespoon
  Tomato sauce 3⁄4 Can (7.5 oz) (Or 1 Small Can)
  Sherry wine 1 Tablespoon
Directions

GETTING READY
1. Wash and cut the kidneys into 1" cubes.
2. Soak them for one hour in salted water
3. Drain and set aside

MAKING
4. In a large frying pan, heat the butter
5. Add the parsley, onion, and garlic
6. Add the kidneys, tomato sauce and sherry
7. Simmer for an hour or till the kidneys are done

SERVING
8. Serve hot over steamed rice
