Corned Beef Hash
|Vegetable oil||1 Tablespoon|
|Onion||1 Medium, peeled and chopped|
|Potatoes||2 Medium, baked, pared and diced|
|Diced cooked corned beef||8 Ounce (2 Cups)|
|Half and half||1⁄4 Cup (4 tbs)|
1.Take a 1 1/2 quart glass casserole, heat oil and onion in it in the microwave oven for 3 minutes at High without covering.
2.Put potato and corned beef; mix well and cook for 5 minutes at High.
3.Mix well once in between.
4.Once done, stir in half and half.
5.Let the ingredients get heated to serving temperature of 2 minutes as High.
6.Season with salt and pepper.
