Rolled Rib Roast

1. Preheat the oven
2. Season roast with salt and pepper to taste.
3. Place, fat side up, on rack in shallow pan. Insert meat thermometer in center of roast. Bake in 325-degree oven for about 2 hours or to 150 degrees on meat thermometer. Let roast stand for 20 minutes in warm place before carving.
4. Serve with browned whole potatoes
