Roast Beef Tenderloin
|Beef tenderloin||1 Large, halved|
|Garlic||1 Clove (5 gm)|
|Melted butter||1 Cup (16 tbs)|
|Bread crumbs||1 1⁄2 Cup (24 tbs)|
|Diced celery||1⁄2 Cup (8 tbs)|
Have tenderloin split and flattened at market.
Melt butter in skillet; add onion and mushrooms, browning lightly.
Add bread crumbs, celery and enough hot water to moisten.
Season with salt and pepper; spread over half the beef.
Bring second half over; fasten edges together.
Season with salt and pepper; place on rack in baking pan.
Arrange bacon over top.
Bake at 350 degrees for 1 hour.
