Apricot Glazed Pork Roast

Ingredients
  Apricot preserves 1⁄2 Cup (8 tbs)
  Dijon mustard 4 Teaspoon
  Dried thyme 1 1⁄2 Teaspoon
  Pork loin roast 2 Pound
  Cooking spray 1
Directions

1. Preheat oven to 350°.
2. Combine first 3 ingredients in a bowl; stir well. Brush roast lightly with preserves mixture. Place on a broiler pan coated with cooking spray. Insert meat thermometer into thickest portion of roast.
3. Bake at 350° for 1 hour and 55 minutes or un til thermometer registers 160° (slightly pink), basting occasionally with preserves mixture. Let stand 15 minutes before slicing.
4. Slice roast into 6 (4-ounce) portions; place in 6 labeled small heavy-duty, zip-top plastic bags. Store in refrigerator up to 4 days or in freezer up to 3 months.
