Red Flannel Hash With Meat Stock
|Chopped cooked corned beef/12 ounces corned beef, chopped||2 Cup (32 tbs)|
|Cooked potatoes||1 Cup (16 tbs), peeled and chopped|
|Chopped cooked beets||1 Cup (16 tbs)|
|Instant minced onion||1 Tablespoon|
|Meat stock||1⁄4 Cup (4 tbs)|
Mix all ingredients except butter.
Melt butter in heavy skillet.
Add hash mixture and spread evenly.
Cook slowly, covered, until browned on- the bottom, for about 30 minutes.
Fold and turn out on platter.
If browning is not desired, stir hash during the cooking.
Makes 4 servings.
