Barbecued Short Ribs
|Beef short ribs||5 Pound (Choice Grade)|
|Tangy barbecue sauce||1⁄4 Cup (4 tbs) (Weber'S)|
Trim excess fat from ribs; season with salt and pepper.
Brown ribs on cooking grill over coals at sides of charcoal kettle or in gas kettle with cover off using DIRECT METHOD HIGH HEAT.
Turn meat with tongs.
Switch gas kettle to INDIRECT METHOD LOW HEAT.
Center ribs on cooking grill over drip pan; cover kettle and cook 1 1/4 to 1 1/2 hours, or until meat is fork tender.
Cooking time for less tender grades of meat will have to be increased to 1 1/2 or 2 hours.
Brush ribs with sauce 2 or 3 times during last 20 minutes of cooking.
