Beef Cornucopias

Ingredients
  Canned corn kernels 7 Ounce (1 Can)
  Tomatoes 4
  Red pepper 1
  Green pepper 1
  Mayonnaise 5 Tablespoon
  Cider vinegar 2 Teaspoon
  Salt 1⁄2 Teaspoon
  White pepper 1⁄4 Teaspoon
  Chopped onion 1 Tablespoon
  Beef roast slice 12
  Lettuce leaves 4
  Lemon juice To Taste
  Garden cress 1⁄2 Bunch (50 gm)
Directions

Drain the corn.
Peel and chop the tomatoes.
Remove the cores, pith and seeds from the peppers and cut into thin strips.
Mix together the mayonnaise, vinegar, salt and pepper.
Fold in the corn, tomatoes, pepper strips and onion.
Chill for 20 minutes.
Roll the beef slices into cornucopias and fill with the corn mixture.
Place the lettuce leaves on four or six serving plates and sprinkle with a little lemon juice.
Place the beef cornucopias on top and garnish with the cress.
