|Stewing steak||8 Ounce, diced|
|Gherkins||2 Small (For Garnish)|
|Tomato slices||4 (For Garnish)|
Clean head and put it into a pan, half covering with water and adding all ingredients, except steak.
Simmer gently for about 1 hour, then add diced stewing steak, if used, and continue cooking until all the meat is tender.
Remove meat from head, dice and place in a basin with the steak.
Boil stock down until only about 1/4 pint remains, strain, then add broken egg shells, so tiny pieces of meat etc.
adhere to them.
Strain over meat and allow to set.
When set, turn out and garnish with gherkins and tomato slices.
