Microwave Beef Topped Tostadas
|Flour tortillas||4 Large|
|Lean ground beef||1 Pound|
|Onion||1 , chopped|
|Jalapeno pepper||1 , seeded and diced|
|Garlic||1 Clove (5 gm), minced|
|Chili powder||1 Tablespoon|
|Ground cumin||1 Teaspoon|
|Tomato||1 Large, seeded and chopped|
|Shredded cheddar cheese||1 Cup (16 tbs)|
|Shredded lettuce||1 Cup (16 tbs)|
Pierce tortillas in a few places; microwave each on microwaveable rack at High for 1-1/2 to 2 minutes or until barely crisp, turning and rotating once.
Place on microwaveable plates.
In 8-cup (2 L) microwaveable bowl, crumble beef.
Add onion, jalapeno and garlic; microwave at High, stirring often, for 3 to 5 minutes or until meat is no longer pink.
Stir in chili powder, cumin, salt and pepper.
Add tomato; microwave at High for 1 to 2 minutes or until hot.
Using slotted spoon, divide beef mixture among tortillas; sprinkle with lettuce, then Cheddar cheese.
Microwave each at High for 30 to 60 seconds or until cheese melts.
