Beef And Scallop Saute
|Peanut oil||2 Tablespoon|
|Minced fresh garlic||1 Teaspoon|
|Trimmed beef tenderloin||1 Pound, cut into pieces 1/2 inch thick, then halved crosswise (Narrow End)|
|Sea scallops||3⁄4 Pound|
|Diagonally sliced green onion||1 1⁄4 Cup (20 tbs)|
|Flavored brine||1 Tablespoon|
|Freshly ground pepper||To Taste|
|Red pepper flakes||1 Pinch|
Heat oil in wok or large skillet until almost smoking.
Add garlic and beef, then scallops, and stir-fry about 30 seconds.
Add remaining ingredients and stir-fry beef and scallops another 20 to 30 seconds.
