Crock Pot Corned Beef

I like the idea of slow cooking with all the juices being released by meat and vegetables. This crock pot corned beef dish is one that is done really well using the slow cooking techniques. The meat cooked over a few hours with vegetables on a slow fire really brings out the very best.
Ingredients
  Corned beef brisket 3 Pound, cut into cubes
  Potatoes 6 Medium, cut into bite sized pieces (peeled)
  Celery stalk 2 , finely chopped
  Green peas 1 Cup (16 tbs)
  Carrots 2 , cut into juliennes
  Cabbage 1
  Pepper 1 Teaspoon
  Garlic 4 Clove (20 gm), finely chopped
  Water 2 Cup (32 tbs) (Adjust quantity of water as needed)
Directions

Grease the crockpot with butter. Add in a layer of potatoes and then a layer of carrots. Add the green peas. Now add the corned beef and pepper. Add the celery. Cabbage is best cut into 10-12 big pieces and placed around the corned beef. Sprinkle the chopped garlic on the meat all over. Pour the water and cover. Cook on low for approximately 5-6 hours. Open stir once. Cover and cook for another hour or till the corned beef is well done. Take out , cut into slices and serve with a large helping of the vegetables. Garlic bread would go perfectly with this delicious corned beef.

Can you use just a regular roast or does it have to be 'corned' and What are juliennes??

You can use any roast that can stand long cooking. The idea is to use a cheap cut, which is normally tougher and needs long cooking . Julienne is a type of vegetable cutting, where the cut vegetables resembles match stick or straw. For a better understanding you can watch this video http://www.ifood.tv/video/julienne_a_carrot
