1. Trim all the fat from the fillet.
2. Rub the meat with olive oil and press the pepper into it.
3. Insert a spit through the length of the fillet, put it in front of a very hot fire, and cook by radiant heat until the meat is grilled to your taste. This will take anywhere from 15 to 30 minutes, depending on size of the fillet and intensity of the fire.
4. Transfer meat to a serving board or platter, remove the spit, and carve into serving slices.
